Chicken Rogan Josh

This is the first Cooking with Maura programme where you can learn how to make an authentic Rogan Josh Curry following the Spice Valley (Horwich) recipe. This tutorial is the first of 12 showing you the method and ingredients required to make restaurant quality food at home. The spices required for this dish are for sale here on the Backup North West website as the proceeds from each sale are for the Backup charity. For every pack sold makes a meal for two AND the profits pay for two meals for young people who are temporarily homeless.


In this session you can watch Maura, the charity CEO, prepare and cook a Chicken Rogan Josh for the Mayor of Bolton, Councillor Linda Thomas; and find out what she thought of it. This is a step by step guide to assist you to follow the recipe and produce the perfect dish; all filmed in the Spice Valley (Horwich) kitchen under the watchful eye of their Head Chef, Mr Santosh.



  • Heat the oil in a large pan
  • Add the cardamom pods, bay leaves and cinnamon sticks
  • Fry for 2 minutes
  • Add the chopped onion and fry until golden brown, stirring regularly
  • Add the ginger and garlic paste, then salt, then ALL the spices from your Backup spice pack
  • Stir for one minute
  • Add tomato puree, then add the blended tomatoes
  • Add the chicken to this mixture
  • Stir thoroughly for 2 minutes and then add the water
  • Stir, add the pan lid and cook on high heat for 10-12 minutes, occasionally stirring (it should be bubbling but not boiling over)
  • Once cooked, remove bay leaves, cardamom pods and cinnamon sticks.

When serving add half a finely chopped fresh tomato and chopped fresh coriander for garnish

Serve with rice or bread.

2 tablespoons cooking oil
2 bay leaves
4 green cardamom pods
1 stick cinnamom
1 large onion finely chopped
1 tablespoon ginger and garlic paste
1 1/2 teaspoons salt
1 tablespoon tomato paste
400g tinned tomatoes (blended)
300g chicken breast (diced)
2 cups of water
  Fresh coriander to garnish


All spices required to make this authentic dish for 2 people


This pays for 2 meals for a young person who is homeless.
